On a cold, grey afternoon in London England, these were the cookies I kept reaching for.
Made with brown butter and sourdough discard, each one has a depth of flavor that's hard to explain until you taste it - toasty and slightly caramelized, with a chew that holds its ground long after they've cooled. The white chocolate melts into soft, creamy pockets as they bake, and the roasted salted macadamia nuts give every bite a rich, buttery crunch. A whisper of cinnamon and nutmeg rounds it all out, you don't taste them exactly, but you'd notice if they were gone.
Best enjoyed with a cup of tea and a friend to share them with - they have a way of disappearing before the conversation is over.
