Every family has a celebration cake, and in our family this was it. This carrot cake recipe comes from Jenny Morris, one of South Africa's most beloved food personalities, known affectionately as The Giggling Gourmet. Born in Durban, she became the first South African chef to host her own show on the Food Network, has cooked for presidents and royals, and has spent decades making people laugh and eat well in equal measure. This recipe is a celebration staple in the truest sense.
It is not a simple carrot cake. Grated carrot and crushed pineapple keep the crumb extraordinarily moist, while walnuts, desiccated coconut and poppy seeds give it a richness and texture that makes every slice feel like a little event. Warmly spiced with cinnamon and finished with a buttercream icing that is soft, with a touch of vanilla and lemon zest.
