A beautiful seasonal vinegar that smells and tastes unmistakably of ripe Williams pears: bright, fragrant, and with just enough acidity to make everything it touches a little more interesting.
The pears from the orchards of family, friends, and trusted local growers are gently pressed, fermented, then aged in oak barrels for up to two years until the balance of fruitiness and acidity is exactly right. The result is something rare: a vinegar with genuine character.

Mario Pojer and Fiorentino Sandri have been making wine on the steep eastern slopes of the Adige valley in Trentino since 1975, two friends who set out to revive forgotten local grapes rather than follow international trends. Their venture into vinegar was equally unconventional. In a country where producing vinegar can suggest a winery is struggling, they saw it differently: a chance to make something exceptional. Their proximity to the Germanic traditions of Alto Adige, where pickles and fermented things are taken seriously, pushed them toward a standard few bother to reach.

Use to make a spring salad vinaigrette, to enjoy alongside some fresh Huddle sourdough. Also great to glaze pork chops or to sprinkle over melon and strawberries.
