PLUM & BLACKBERRY GALETTE (Family-size)

In the spirit of celebrating seasonal produce, this week's galettes are filled with summer plums and blackberries.

A galette is the French version of an open pie, folded by hand, unfussy in shape, and made to be set in the middle of the table and shared. Plums and blackberries are layered over a soft almond frangipane, gently wrapped in rich pastry and finished with a light vanilla glaze.
The fruit bakes down deep and jammy, tart at the edges and sweet in the middle, with a golden, caramelized crust that gives way to the fruit beneath.

One generous galette, meant for gathering, brought out warm at the end of a summer meal with a big scoop of ice cream or a generous dollop of cream.
