Last year, I had the privilege of cooking for a group of friends in France. I found a gorgeous box of summer apricots at the market with a plan to make a tarte tatin — which failed miserably. In a rather desperate attempt to still produce a delicious dessert, I cooked the apricots with lavender sugar and used them as a filling for crêpes. It quickly became everyone's favourite. I am hoping this preserve gives you the same feeling of sitting at a French countryside table.

Made with 63% apricots and real lavender flowers, this preserve has an honest, fruit-forward texture with just enough floral edge to make it feel distinctly and unmistakably Provençal.

L'Épicurien began in 1982, when master jam maker Bernard Le Gulvout opened a delicatessen in Paris with the ambition of being a true artisan du goût — an artisan of taste. He was later joined by his two nephews Xavier and Benoît, and the family eventually moved production to Le Bosc in the heart of Languedoc-Roussillon, surrounded by the fruit orchards that supply their recipes. Everything is still cooked in open copper cauldrons, adjusted by hand based on the sweetness and texture of each season's fruit.

Spread onto a warm slice of Huddle sourdough or a scone with good butter, or spoon over yogurt for breakfast.
