La Cultivada's Quintaesencia — the oil they named for its essence. It's certified organic, cold-pressed, and unusually smooth: full-bodied but never sharp, without the bitterness a young oil can carry, and with a finish that stays with you.
The Vecino family makes it in the southwestern hills of Córdoba, in a corner of Andalusia that once supplied the Roman Empire with its most prized oils. Their mill, the Molino de Santa Ana, dates to the 1800s and looks out toward the Castle of Almodóvar. Elena Vecino returned to the family land in 2007 to make oil under her own name, and the work is still small and done by people who know the groves. Elena, the founder of La Cultivada, believes that love does not dominate; it cultivates.
Pour it over a warm, torn piece of fresh sourdough with a little flaky salt, or use it where good oil earns its place: finishing a soup, dressing tomatoes, set out on the table for dipping. Good oil and good bread need very little else.
