Never met a clafoutis (kla-foo-TEE)? It is a beloved French dessert: fresh cherries baked into a soft almond custard. Think of a baked custard with the tender edges of a Dutch baby, studded with whole summer cherries. Ours finishes in the oven with a little butter and brown sugar, so the top caramelizes while the center stays soft. The cherries turn jammy in the heat, their brightness settling into the gentle sweetness of the custard.

Serve it just warm or at room temperature, with fresh cream or a scoop of vanilla ice cream. Dessert for your summer dinner party, taken care of.
