One of the joys of running a small bakery is getting to try recipes from other microbakers - to see if something special is worth bringing to Huddle friends and neighbors. This one comes from Matthew Duffy, a Canadian chef and home baker whose porridge sourdoughs caught my eye.

Made with French flour and organic wholewheat, the dough is enriched with oat porridge, slowly browned butter, and caramelized honey — each one adding something: softness, nuttiness, a gentle sweetness that makes the whole loaf feel a little like breakfast at its best.

Slightly sweet, warm, and nutty, it's a great way to start the day. Baked in a loaf pan for a softer crust and easy slicing — perfect for breakfast sandwiches for the little ones. Spread with nut butter, or butter and honey, and the whole family will be happy.
