The Sigillo Argento (Silver Seal) is Acetaia Leonardi's I.G.P. balsamic, made from grapes grown on their own estate,  one of fewer than a handful of producers in Modena who can say that.
This balsamic is a masterful blend of cooked grape must and high-quality wine vinegar, with a thick viscosity akin to maple syrup.

Acetaia Leonardi identifies the age and viscosity of their vinegars with a proprietary symbol—coins—with each coin representing approximately 2 years of aging. This Silver Seal balsamic has been aged 8 years. 

The Leonardi family has farmed the same land at the foothills of the Apennines, 16 kilometres southwest of Modena, since 1871. Four generations in, Giovanni tends the process the way an artist tends his craft. Lambrusco and Trebbiano grapes are hand-harvested each September from the family's own vines, then cooked for 72 hours in an open copper cauldron — never above 85°C, Giovanni insists, or bitterness creeps in and can't be removed. From there, the must ages in attic batterie: sets of small barrels in chestnut, oak, cherry, and juniper, drawing in the drama of every season until it becomes what it is.

Stir a spoonful into good olive oil and use it as a dip for a fresh slice of sourdough. It's one of those combinations that needs nothing else.
